Green House Bistro Gives Valencia High School Culinary Students a Taste of the Restaurant Business
Students from Valencia High School are getting some real-world culinary experience thanks to a unique partnership with Green House Bistro and the Center for Ageless Living.
Green House Bistro already has a busy kitchen. The restaurant prepares daily meals for at least 100 Center for Ageless Living residents while also handling special events, takeout orders and poolside dining.
Now, some of the people helping prepare those meals are students enrolled in Valencia High School’s culinary program.
The partnership gives students an opportunity to move beyond the classroom and gain hands-on experience inside a working kitchen. This year, they were also given the chance to help create the bistro’s menu for Albuquerque Restaurant Week.
Owner Suzette Lindemuth said the idea was to walk students through the entire process of developing a menu, including choosing ingredients and figuring out what works and what doesn’t.
The bistro also has access to gardens on the Center for Ageless Living campus, where vegetables and other foods are grown and can be incorporated into dishes.
The program and the students behind it are featured in “An All-Ages Special” by Ungelbah Dávila in edible New Mexico.
Fresh Ideas for Your Next Salad
If your usual salad is starting to feel a little too predictable, edible New Mexico is also offering some new ways to change things up using homemade dressings and flavorful toppings.
The latest edition of Cooking Fresh features recipes for Honey Shallot Dressing, Gochujang Vinaigrette, Roasted Red Pepper Dressing, Parmesan Crisps and Crispy Shallots.
The recipes are designed to work with fresh ingredients from the farmers market and make it easier to put together a quick meal without settling for the same salad every day.
Two Spots Open for Spain This October
For food lovers looking for a much bigger culinary adventure, two spots have opened on edible New Mexico’s previously sold-out food tour of Spain.
The 12-day trip runs October 17–26 and travels from Barcelona to Madrid, with experiences including pintxos, Rioja and Ribera del Duero wines, bustling markets, a Catalan cooking class and more.
Italy Is Coming in 2027
edible New Mexico is also looking ahead to Italy in 2027.
An Italy Information Tour is scheduled for September 22, giving interested travelers a chance to learn about the itinerary, ask questions and get a preview of what the trip will offer.
The upcoming Italian adventure is expected to feature some of the country’s best-known culinary treasures, including truffles, Barolo, Parmigiano-Reggiano, balsamic vinegar and Tuscan wines.
From giving young culinary students real-world experience here in New Mexico to exploring food traditions overseas, there is plenty happening for people who love good food and the stories behind it.
