A seasoned farmer, Listro learned from her mentors about what yogurt can mean in the tool kit of a sheep-tender. First and foremost, yogurt is preservation. Like a farmer turning their abundance of cucumbers into pickles for the pantry, yogurt is a means of extending the longevity of every precious drop of milk.

Gochujang and Ginger Apple Pie
Gochujang, the fermented Korean chile paste, isn’t just for savory dishes. If green chile belongs in apple pie, why not give gochujang a turn?
We skipped the traditional cinnamon in favor of fresh ginger—it brightens the apples and lets the gochujang do what it does best: add a little heat that cuts through the sweetness.
Albuquerque-made NM ChileJang is a great choice for this pie, but gochujang is now widely available in grocery stores, including at La Montañita Co-op, where you’ll also find an abundance of local apples each fall.

The Mother Sauce
Kyle Key, the maker behind NM ChileJang, is currently the only producer of cottage-style gochujang in the United States.
Inspired by a trip to South Korea, Key saw a connection between Korean gochu and New Mexico red chile and began experimenting with traditional fermentation methods.
In this episode of 5-Minute Fridays, Key shares how he uses locally grown red chile to create a distinctly New Mexican take on one of South Korea’s mother sauces—and how it has amassed a devoted following among local chefs and chile lovers.
