Local Hero: Full Circle Mushrooms

Full Circle Mushrooms is the 2023 Local Hero for Farm, Greater New Mexico. Full Circle specializes in gourmet mushrooms, combining traditional knowledge with a system that produces healthy food while regenerating the soil through mindful growing practices. “I was led to mushrooms by the idea of making something that will give back to nature with a minimal impact,” says founder and owner Ximena Zamacona, “by using agricultural waste to create something of value.”

Miso Mushroom Mole

This recipe is derived from one developed by Chef Valerie Frei, who was at El Destilado in Oaxaca. Frei’s original recipe for this smooth and umami-rich vegan mole uses chilhuacle negro, but this recipe substitutes New Mexico chile nativo, along with pine nuts, to create a sauce with a uniquely New Mexican character.
