The Queue for the ’Cue

If you find yourself in Cloudcroft, New Mexico, there’s one smell that will pull you in long before you see the source—oak smoke drifting from Mad Jack’s Mountaintop Barbecue.

Owner and pitmaster James Jackson, a fellow native Texan, brings the heart of Central Texas barbecue to the Sacramento Mountains, but with a distinctly New Mexican twist. Everything on the menu is smoked low and slow over Texas oak: tender beef brisket, fall-off-the-bone pork ribs, and savory sausage. But instead of the traditional jalapeño kick, Jackson packs his links with Hatch green chile, giving every bite a bold regional flavor.

And then there’s the line—yes, the line. At Mad Jack’s, waiting is part of the experience. It’s a place where strangers turn into friends, where conversations flow as easily as the smoke from the pit, and where your appetite builds right alongside the anticipation.

Mediterranean Orzo Salad: Your Creative Canvas

While you’re thinking about your next barbecue adventure, here’s something fresh for the table—Mediterranean Orzo Salad. This versatile dish serves as a base for endless creativity. Swap the orzo for fusilli, orecchiette, or any other short pasta you have on hand. Add warm grilled vegetables for a smoky depth, or switch up the herbs—try tarragon for a licorice note or basil for a bright, summery flavor.

It’s a dish that’s as adaptable as it is satisfying, making it perfect for family dinners, picnics, or as a refreshing side to balance a plate of rich smoked meats.
